Choosing the right coffee
Tasting notes matter, but service style, equipment and the drinks you sell matter more. This is the quickest route to a range that works commercially.
If most orders contain milk, lead with chocolate, caramel and nut notes. They stay present in a flat white or latte and are easy for customers to understand.
Espresso and filter coffees work across the espresso machine and batch brewer. Espresso only coffees are dialled specifically for espresso service.
A dependable house espresso, a decaf and one distinctive option is enough for most menus. It gives customers a real choice without making service harder.
Use roughly 55 cups per kilo. Divide your weekly coffee sales by 55, then add a sensible buffer. Smaller, regular orders help keep the coffee fresh.

If you’re not sure where to start, start here. Smooth, nutty and caramel sweet, but still punchy enough to cut through milk.
Caramac · Honey · Tunnock’s Wafer
Sweet, biscuity and comforting. Basically the coffee version of the biscuit tin coming out with the tea.
Vanilla · Butterscotch · Lime
Sweet and smooth with vanilla, butterscotch and a wee lift of lime. The one for mornings when everybody looks half deid.

Bright and fruity at first, chocolatey underneath. A really versatile coffee with a brilliant wee Craigneuk story behind it.
Honey · Milk chocolate · Vanilla
Proper coffee without the twitch. Sweet, smooth and comforting, even if somebody orders it at nine at night.
Plum · Orange · Baker’s chocolate
Plum and orange up front, baker’s chocolate underneath. Bright and juicy, but no sour nonsense.
Dark chocolate · Blackberry · Raisin & red fruit
Big, jammy and full of fruit. Dark chocolate, blackberry and red fruit, then a tea like finish to keep it classy.
The maths
A kilo makes about 55 cups. Approved customers can take the kilo price from Shopify, pop in what they charge and see when that bag has paid for itself.

That covers the coffee in the bag only. Milk, cups, lids, VAT, staff and the rest of the bills still need counted.
How this started
I bought the cheapest De’Longhi I could find and taught myself to make coffee on YouTube. That turned into charity pop ups, free coffees from the shed, the Barras and weekends at Dockyard Social.
The whole thing has always been about connecting with people and making folk smile. Doing it over a banging cup of coffee just makes it even better.
